Alaskan Grilled Sweet Bourbon Duck

double recipe as needed

combine:
1/4 cup pineapple juice
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon Kentucky Bourbon
1/4 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/2 cup cup vegatable oil
1 teaspoon chopped chives
1/4 teaspoon poulty seasoning

Place split skinned duck breasts ( legs & thighs also with larger ducks) in the marinade sauce, cover and refrigerate for a minimum of 1 hour (3-4) hours much better.
Cook on a hot charcoal or gas barbeque grill basting regularly untill done to your liking,(6-8) minutes per side depending upon size, baste frequenty and do not over cook. serve hot and sprinle fresh chives on top


also- superb on Salmom without the poultry seasoning- remove the skin from the Salmon filets before marinating- don't over cook, baste regularly untill cooked 4-5 minutes per side- serve hot with fresh chives sprinkled on top- just plain mouth watering and melts in your mouth
