Duck Chili con Carne

Made some chili con carne with three ducks I had from last season,,,,(excuse the dang sideways pictures - I'll have to figure that out)



ingredients:

browned the meat then removed from pan,,,

sauteed the peppers and onions,,,

then added the meat back to the pot, seasonings, garlic, and chicken stock (saved the carcasses to make duck stock for next time)

cooked it down for 2 1/2 hours,,, added lime juice and cilantro then simmered another 20 minutes,,,

served with diced tomatoes and sour cream,,,,

ate off that for three days,,,,each day got better (as all soups, stews, chilis, etc do as leftovers)
