Just mixed back straps with 50% pork and burger came out tender and great.
Anyone takes one of these animals please reach out to me ,,,,

I am in the process of making Brats as well off the rumps. .

Made some more ground , and put in Taco's ... goat came out clear as a bell , but tempered it with basil and cayenne pepper.

What is a desert mountain goat? Aoudad, ibex?

Some call it a Barbary Sheep or Aoudad , but if you keep it simple :

Mountain goat is in northern North Amerca

Desert Mountain Goat is in the southern North America (Davis mountain range) Texas , N.M. , Arizona , Nevada and old M.
They were intro'ed 60 years ago from southern Africa.... and they are doing real well here in the states.
