Preparing Bobcat

Today was an awesome hunt with hounds and scored on a 31 pound bobcat.
I am able to process the meat , and have some ideas about preparing it.

I plan on taking half of it , and mixing it with beef and pork and making Brats.
The other half I am open to suggestions .......

Has anyone eaten it , or made it in a way that was good ????

Nope, not very common table fare, but make sure you cook it. Don't leave it rare like you would venison. Predators can carry trichinosis, and full cooking is the best sure way to get rid of it.

Thanks for the thought , I cook all wild game thoroughly , ironically I am more concerned about restaurant food :(

Had a roast of back strap and rump roast.
I tend not to doctor up wild game , and eat it as it is...

Well this was a Tom, and surprisingly this was a pink red lean meat,
Initial taste was rabbit, with a flavor of quail grain taste , but end of pallet was a pongee flavor.
I have eaten beaver , this was much gamer of taste , but not faint at heart.
Ironically my mum loved it.

I will cook up the brats Tuesday and see how that is , I mixed a small amount of pork and beef 10%.
The roast cold in a sandwich with horseradish was excellent.
