Cougar

Postby woodboro » Tue Jul 19, 2016 7:59 am

Looking for EXPERIENCED folks that have cooked Cougar.

My only experience was about 20 years ago , and it was very thick and literally tasteless.

This winter I will be in Montana for a cougar hunt , so I need some ideas to look forward to trying.

Thanx in advance.

No experience but I've seen recipe posts of people treating the backstraps similar to pork loin. Can crockpot or cut steaks and grill. Jerky is a good option too, but make sure you cook thoroughly, can carry Toxoplasma... Not inherently dangerous for healthy people, caution in pregnant women.

I would guess most recipes that work well with pork or veal should work well. I had cougar for the first time last year. A friend that happens to be chef invited us over. He pounded out thin medallions like veal cutlets seasoned with salt and pepper dipped in flour fried them in a pan with a little olive oil and butter. once they were done he made a simple pan sauce using white wine and a venison dime-glace. Delicious :multi: I will never look at a house cat the same again, aren't they just little cougars?

I have stored that in my recipe file ... big thanx.
If you still have some, make some brats out of them , add alittle beef and pork fat.
