Rabbitt and Coke?

Postby bill10979 » Mon Oct 25, 2004 8:48 pm

I read an article from a very popular chef recently, whos specialty is preparing rabbitt and hare-his best recipe called for marinading in Coca Cola. has anyone tried this and any success? I shot a few last yr when I could hit them-usually my Dog was hot on the trail, but I miss my fair share. I hadnt prepared any in a while-and man was it chewy. I love the taste though and want to find a good recipe. Help is appreciated.

Rabbits on coke...

Postby orhunter » Mon Oct 25, 2004 10:49 pm

Yea, I've heard of using coke for a marinade but I can't remember for what kind of animal or bird. I think it was for ducks if I had to throw out a wild guess.

The rabbits I've shot the past few years while hunting chukars have all been tender and tasety without any special treatment. I just cut them up into their smaller body parts and fry them like chicken. If you want to spice them up a bit, just sprinkle a little Cajun spice on the bare meat, rub it in and let sit a while before coating with flour and frying.

Take wabbit and quater,

Place in crock pot, cover with water. Add one chicken bullion cube, One chopped garlic clove and one half of medium onion cut in big chunks.

Cook on low for 8 hours.

Remove from crock pot and flour, Fry in real butter until browned.

ENJOY...

Working on that steadiness to fur? :?

Quarter the rabbit, stuff into Ziplock bag. Pour in 1/4 cup of balsamic vinegar, 1/4 cup soy sauce, 3 cloves chopped garlic and...half can (6 oz.) of soda (cola or 7Up). Marinate 24 hours in refrigerator, shaking bag lightly every eight hours. (Don't worry, the carbonation won't blow up... ) Broil at 450 degrees for 15 minutes, then at 325 for half hour.

Thanks for the ideas. The bunnnies I took last yr were on the large mature side and probably a little tougher than what I remember yrs ago, when I fried up some great younger bunnies. I thought the Coke might soften em up, and I know the crock pot will. Cops around here carry it to remove egg and oil stains on windshields-imagine it in your stomach!!

BTW-I dont train my DD steady to fur. In fact, we hunted w/Beagles a few times last yr and had a ball. Once, I saw 1 make an escpe out of thicket run into field, and sit a few hundred yds in cover, mine caught scent, tracked it, jumped it and circled it back, barking whole time. I missed all 5 shots!! I thought I was a better shot. It caught me offguard really and I was kind of excited. Bunny Fever!!! Have a good one .
